Our Magento 2 Address Auto-Complete automatically matches the countries enabled in the admin panel. E.g., in the Magento Admin Panel, if the UK and USA are enabled, end-users will only be able to search for addresses in the UK and USA.

Customers can select the countries they'd like to use by going to Admin Panel > Stores > Configuration > General (under General) > Allowed Countries (under Country Options)
